Ingredients

The Peach Filling

  • 5 cups diced peeled peaches
  • 2 tablespoons fresh lemon juice

  • 1 cup granulated sugar
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

The Dough

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • 1 cup cold unsalted butter, cut into small pieces
  • 1 large egg, lightly beaten
  • ½ teaspoon vanilla extract
  • to taste cinnamon and sugar for sprinkling on top

Instructions

  1. Preheat the oven to 375°F and prepare a 9x13-inch baking pan with cooking spray.
  2. For the peach filling, combine diced peaches with lemon juice in a bowl, then mix dry ingredients and add to the peaches.
  3. For the dough, whisk together flour, sugar, baking powder, salt, and cinnamon, then cut in the butter until crumbly.
  4. Mix the beaten egg and vanilla into the flour mixture until combined.
  5. Press half of the dough into the prepared pan, then spread the peach filling over it.
  6. Crumble the remaining dough over the peach layer and sprinkle with cinnamon and sugar.
  7. Bake for 45 minutes until golden brown, then cool completely before cutting into squares.
