Instructions
- Preheat the oven to 375°F and prepare a 9x13-inch baking pan with cooking spray.
- For the peach filling, combine diced peaches with lemon juice in a bowl, then mix dry ingredients and add to the peaches.
- For the dough, whisk together flour, sugar, baking powder, salt, and cinnamon, then cut in the butter until crumbly.
- Mix the beaten egg and vanilla into the flour mixture until combined.
- Press half of the dough into the prepared pan, then spread the peach filling over it.
- Crumble the remaining dough over the peach layer and sprinkle with cinnamon and sugar.
- Bake for 45 minutes until golden brown, then cool completely before cutting into squares.
