Ingredients

Crust & Topping

  • 1 cup all-purpose flour
  • ½ cup old-fashioned whole rolled oats
  • cup packed light or dark brown sugar
  • 1 teaspoon ground cinnamon
  • 10 Tablespoons unsalted butter, cold and cubed
  • ½ cup chopped pecans (optional)

Peach Filling

  • 1 large egg
  • ½ cup granulated sugar
  • 1 Tablespoon all-purpose flour
  • ¼ teaspoon salt
  • 2 medium peaches, peeled and chopped

Vanilla Icing

  • ½ cup confectioners’ sugar
  • 1 Tablespoon milk
  • ½ teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare the baking pan.
  2. Make the crust by mixing flour, oats, brown sugar, and cinnamon, then cutting in the cold butter until crumbly.
  3. Reserve some of the mixture for topping and press the rest into the bottom of the pan.
  4. Bake the crust for 15 minutes.
  5. Prepare the filling by whisking the egg and sugar, then adding flour, salt, and folding in the peaches.
  6. Pour the filling over the baked crust and sprinkle with the reserved topping.
  7. Bake for 30-32 minutes until golden brown.
  8. Cool in the pan for 30 minutes, then refrigerate for 2 hours.
  9. Cut into squares and drizzle with icing before serving.
