Peach Filling

Vanilla Icing

confectioners’ sugar

Instructions
- Preheat the oven to 350°F (177°C) and prepare the baking pan.
- Make the crust by mixing flour, oats, brown sugar, and cinnamon, then cutting in the cold butter until crumbly.
- Reserve some of the mixture for topping and press the rest into the bottom of the pan.
- Bake the crust for 15 minutes.
- Prepare the filling by whisking the egg and sugar, then adding flour, salt, and folding in the peaches.
- Pour the filling over the baked crust and sprinkle with the reserved topping.
- Bake for 30-32 minutes until golden brown.
- Cool in the pan for 30 minutes, then refrigerate for 2 hours.
- Cut into squares and drizzle with icing before serving.
