Chili Lime Pork Loin

Ingredients

The pork

  • 2 lb pork loin filet

The marinade

  • 1 Tbsp chili powder
  • 1 medium lime
  • 4 Tbsp vegetable oil, divided
  • ½ Tbsp minced garlic
  • 1 Tbsp soy sauce

Instructions

  1. Whisk together 2 Tbsp of vegetable oil, soy sauce, chili powder, lime juice, and minced garlic in a small bowl.
  2. Microwave the lime for about 20 seconds to extract more juice, then cut it open and add the juice to the marinade.
  3. Place the pork loin in a large zip-top bag and pour the marinade over it, ensuring it's fully coated. Refrigerate for at least 1 hour.
  4. Preheat the oven to 400°F (204°C) and heat the remaining 2 Tbsp of vegetable oil in a large skillet over medium-high heat.
  5. Sear the pork loin in the hot skillet for about 3-5 minutes on each side until browned and crispy.
  6. Transfer the seared pork loin to a baking sheet or roasting pan, baste it with the leftover marinade, and roast in the oven for about 30 minutes or until the internal temperature reaches 160°F (71°C).
  7. Let the pork rest for 5 minutes before slicing and serving.
