Instructions
- Whisk together 2 Tbsp of vegetable oil, soy sauce, chili powder, lime juice, and minced garlic in a small bowl.
- Microwave the lime for about 20 seconds to extract more juice, then cut it open and add the juice to the marinade.
- Place the pork loin in a large zip-top bag and pour the marinade over it, ensuring it's fully coated. Refrigerate for at least 1 hour.
- Preheat the oven to 400°F (204°C) and heat the remaining 2 Tbsp of vegetable oil in a large skillet over medium-high heat.
- Sear the pork loin in the hot skillet for about 3-5 minutes on each side until browned and crispy.
- Transfer the seared pork loin to a baking sheet or roasting pan, baste it with the leftover marinade, and roast in the oven for about 30 minutes or until the internal temperature reaches 160°F (71°C).
- Let the pork rest for 5 minutes before slicing and serving.
