Smoky Grilled Eggplant

garlic dill sauce (or tahini)

extra virgin olive oil
Instructions
- Slice the eggplant into ¼-inch rounds and place on a baking sheet.
- Drizzle coconut aminos and half the oil over the eggplant, massaging it in.
- Mix all spices in a small dish and sprinkle over both sides of the eggplant.
- Heat a grill or grill pan over medium-high heat and brush with oil.
- Add the eggplant to the grill and place something heavy on top to create grill marks.
- Grill for about 3 minutes on each side until tender and marked.
- Plate the eggplant and serve with optional garnishes or enjoy as is.
