Smoky Grilled Eggplant

Ingredients

The eggplant and seasoning

  • 1 large eggplant
  • 4 Tbsp coconut aminos (or tamari)
  • 1-2 Tbsp avocado oil (or other neutral oil)
  • 2 tsp smoked paprika
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • ½ tsp sea salt
  • ½ tsp garlic powder
  • ½ tsp cayenne pepper (or red pepper flake)

For serving (optional)

  • to taste fresh parsley
  • to taste garlic dill sauce (or tahini)
  • to taste extra virgin olive oil

Instructions

  1. Slice the eggplant into ¼-inch rounds and place on a baking sheet.
  2. Drizzle coconut aminos and half the oil over the eggplant, massaging it in.
  3. Mix all spices in a small dish and sprinkle over both sides of the eggplant.
  4. Heat a grill or grill pan over medium-high heat and brush with oil.
  5. Add the eggplant to the grill and place something heavy on top to create grill marks.
  6. Grill for about 3 minutes on each side until tender and marked.
  7. Plate the eggplant and serve with optional garnishes or enjoy as is.
