Big Fat Double Dark Chocolate Cookies

Instructions
- Preheat the oven to 375°F and line two half sheet pans with parchment paper.
- In a stand mixer, combine cold butter, brown sugar, and granulated sugar, starting on low speed and gradually increasing to medium for 4-6 minutes until creamy.
- Add the cold eggs and vanilla extract, mixing until well combined and light in color for 2-3 minutes.
- Mix in the all-purpose flour, cake flour, cocoa powder, baking soda, and salt on low speed until just combined, then add the chocolate chips and mix until no dry spots remain.
- Scoop large balls of dough (about 4-4.25 ounces each) and place them several inches apart on the prepared baking sheets.
- Bake for 9-10 minutes until the outside is set but the inside is still soft. Let cool on the baking sheets for 5-7 minutes before transferring to a cooling rack.
