Big Fat Double Dark Chocolate Cookies

Ingredients

  • 1 cup cold salted butter
  • 1 cup light or dark brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 ¼ cups cake flour
  • ½ cup dark or Dutch-process unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ to 2 cups semisweet or bittersweet chocolate chips or chunks

Instructions

  1. Preheat the oven to 375°F and line two half sheet pans with parchment paper.
  2. In a stand mixer, combine cold butter, brown sugar, and granulated sugar, starting on low speed and gradually increasing to medium for 4-6 minutes until creamy.
  3. Add the cold eggs and vanilla extract, mixing until well combined and light in color for 2-3 minutes.
  4. Mix in the all-purpose flour, cake flour, cocoa powder, baking soda, and salt on low speed until just combined, then add the chocolate chips and mix until no dry spots remain.
  5. Scoop large balls of dough (about 4-4.25 ounces each) and place them several inches apart on the prepared baking sheets.
  6. Bake for 9-10 minutes until the outside is set but the inside is still soft. Let cool on the baking sheets for 5-7 minutes before transferring to a cooling rack.
