Thick and Fudgy Double Chocolate Cookies

Instructions
- Melt ½ cup of butter in the microwave and cool until solid.
- Preheat the oven to 350°F.
- Cream the melted and room temperature butter with sugar and vanilla until fluffy.
- Add the eggs and mix until incorporated.
- In a separate bowl, combine flour, cocoa powder, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, incorporating the coffee as you go.
- Stir in the chocolate chips.
- Roll the dough into balls and place them on a baking sheet lined with parchment paper.
- Bake for 8 minutes and transfer to a cooling rack.
