Slow Cooker Sweet & Tangy Chicken

Ingredients

The sauce

  • ¾ cup packed brown sugar
  • cup apple cider vinegar
  • ¼ cup diet lemon-lime soda
  • 2 tablespoons minced garlic
  • 2 tablespoons low sodium soy sauce
  • ½ teaspoon black pepper

The chicken

  • 2 lbs raw boneless skinless chicken breasts

The thickening

  • 2 tablespoons corn starch
  • 2 tablespoons water
  • to taste crushed red pepper flakes

Instructions

  1. Combine the brown sugar, cider vinegar, soda, garlic, soy sauce, and black pepper in the slow cooker.
  2. Place the chicken breasts in the slow cooker and stir to cover them with the sauce.
  3. Cook on low for 6-8 hours.
  4. Remove the chicken from the sauce and shred it using forks.
  5. Pour the sauce into a saucepan, mix the corn starch and water in a bowl, then add to the sauce.
  6. Bring the sauce to a boil and cook for 2-3 minutes until thickened.
  7. Serve the chicken with the sauce poured over it, garnished with crushed red pepper flakes.
