Ingredients

The salad

  • 2 cans chickpeas, rinsed and drained
  • cup chopped roasted red peppers
  • cup crumbled feta cheese
  • ½ cup chopped fresh basil

The dressing

  • cup olive oil
  • ¼ cup red wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon honey
  • 4 cloves garlic, pressed or minced
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon red pepper flakes

Instructions

  1. Combine chickpeas, red peppers, feta, and basil in a medium serving bowl.
  2. In a small bowl, whisk together olive oil, vinegar, honey, garlic, oregano, salt, pepper, and red pepper flakes.
  3. Pour the dressing over the chickpeas and stir to combine.
  4. Cover and refrigerate for at least 30 minutes to enhance the flavors.
