Raw Kale Salad with Red Pepper Dressing

Ingredients

Dressing

  • ½ cup olive oil
  • 1 medium red bell pepper, seeded and chopped
  • 2 tablespoons apple cider vinegar
  • 1 medium lime, juiced
  • 2 tablespoons agave nectar
  • ¾ inch fresh ginger, peeled and roughly chopped
  • 1 clove garlic
  • ¼ teaspoon fine salt
  • ¼ teaspoon toasted sesame oil (optional)

Salad

  • 5 big stalks kale
  • to taste pinch fine salt
  • ½ medium avocado, cubed
  • 1 medium carrot, peeled and sliced into strips
  • 3 tablespoons purple cabbage, chopped
  • 1 tablespoon cilantro, roughly chopped
  • 1 tablespoon red onion, thinly sliced
  • 1 teaspoon sesame seeds

Instructions

  1. Blend all dressing ingredients thoroughly in a food processor or blender.
  2. Remove kale leaves from the tough stem and break into bite-sized pieces.
  3. Sprinkle kale with salt and massage the leaves for a couple of minutes until they darken and become fragrant.
  4. Place the kale in a bowl and drizzle with the dressing, tossing thoroughly.
  5. Add avocado, carrots, cabbage, and red onion to the salad.
  6. Top with cilantro and sprinkle with sesame seeds before serving.
