Ingredients

The chicken

  • 3 lbs chicken legs (thighs and legs attached), fat trimmed

The marinade

  • 6 cloves garlic
  • 1 large shallot
  • 1 tbsp grated fresh ginger
  • 1 tbsp agave or sugar
  • ¼ cup reduced sodium soy sauce
  • ½ tsp Chinese five-spice powder
  • to taste freshly ground black pepper

Instructions

  1. Blend the marinade ingredients until smooth.
  2. Marinate the chicken in a zip-top bag for 6-8 hours in the refrigerator.
  3. Preheat the oven to 400°F.
  4. Place the chicken on a rack in a foil-lined roasting pan and tent with foil.
  5. Roast for 30 minutes, then remove the foil and continue cooking, basting occasionally, until the internal temperature reaches 165°-170°F, about 45 minutes.
