Ingredients

The main ingredients

  • 4 links sweet or spicy Italian chicken sausage
  • 2 medium onions, sliced into 1/4 inch strips
  • 2 red bell peppers sliced into 1/4 inch strips
  • ½ tablespoon extra virgin olive oil
  • ¾ cup marinara sauce
  • ½ cup shredded part-skim mozzarella
  • ¾ teaspoon kosher salt
  • to taste fresh black pepper

For serving

  • optional crusty bread

Cooking materials

  • 4 sheets Reynolds Wrap® Non-Stick Foil

Instructions

  1. Preheat the grill on high heat on one half and medium-low on the other.
  2. In a large bowl, combine the onions, peppers, olive oil, salt, and pepper.
  3. Tear off 4 sheets of Reynolds Wrap® Non-Stick Foil, each 12 x 18 inches.
  4. Divide the onion and pepper mixture between the foil sheets and top each with 3 tablespoons of marinara.
  5. Seal the foil packets tightly, leaving room for heat to circulate.
  6. Place the packets on the medium-low side of the grill and cook for about 25 minutes until the vegetables are tender.
  7. Add the sausage to the medium-low side of the grill and cook for 6 to 8 minutes, turning often until cooked through.
  8. Slice the sausage and add it to the foil packets, topping each with 2 tablespoons of cheese.
  9. Cover the grill and let the cheese melt for about 5 minutes before serving.
