Ingredients

  • 2 cans (15 ounces each) chickpeas
  • 1 cup homemade chimichurri sauce
  • ¾ cup crumbled feta cheese

Instructions

  1. Rinse and drain the chickpeas, then set aside to drain further.
  2. Prepare the chimichurri sauce as directed.
  3. In a serving bowl, combine the drained chickpeas with 1 cup of chimichurri sauce, reserving the rest for later.
  4. Add the feta cheese to the bowl, mixing to combine, and reserve some for garnish.
  5. Sprinkle the remaining feta on top and serve immediately, or refrigerate for later.
