Instructions
- Rinse and drain the chickpeas, then set aside to drain further.
- Prepare the chimichurri sauce as directed.
- In a serving bowl, combine the drained chickpeas with 1 cup of chimichurri sauce, reserving the rest for later.
- Add the feta cheese to the bowl, mixing to combine, and reserve some for garnish.
- Sprinkle the remaining feta on top and serve immediately, or refrigerate for later.
