Ingredients

  • 2 cans black beans
  • 1 each lime, juiced
  • ½ cup fresh cilantro leaves, chopped
  • 2 small shallots, diced
  • ½ tbsp olive oil
  • ¾ teaspoon ground cumin
  • ¼-½ teaspoon Kosher salt, to taste
  • to taste freshly ground black pepper
  • 1 large avocado, chopped into ½ inch pieces

Instructions

  1. Drain and rinse the black beans thoroughly.
  2. In a large bowl, combine the beans with lime juice, cilantro, diced shallots, and ground cumin.
  3. Season the mixture with salt and black pepper to taste.
  4. Peel and slice the avocado, then serve it on top of the salad or mix it throughout.
  5. Serve the salad at room temperature.
