Ingredients

The oats mixture

  • ½ cup rolled oats
  • ½ cup steel cut oats
  • ½ cup shredded unsweetened coconut
  • 1 14oz can crushed pineapple with juice
  • 1 cup full fat coconut milk
  • ½ cup water
  • ¼ tsp pure vanilla extract
  • ¼ tsp ground cinnamon
  • ¼ tsp salt

To serve (optional)

  • to taste milk of your choice
  • to taste coconut cream
  • to taste Greek yogurt
  • to taste shredded coconut
  • to taste ground cinnamon

Instructions

  1. Combine all the ingredients in a mixing bowl and mix well.
  2. Cover the bowl and refrigerate overnight.
  3. In the morning, stir the oats again and add milk if desired.
  4. Garnish with coconut cream or yogurt, shredded coconut, and a dash of cinnamon before serving.
