Slow Cooker Spiced Nuts

Ingredients

The nuts

  • 4 cups raw mixed nuts (almonds, cashews, pecans, walnuts, etc.)

The sweeteners and flavorings

  • ¼ cup pure maple syrup
  • 2 Tbsp. honey (or additional maple syrup for vegan-friendly)
  • 1 tsp. pure vanilla extract
  • 2 Tbsp. coconut oil, melted
  • Zest of 1 orange

The spices

  • 1 tsp. ground cinnamon
  • ¼ tsp. ground ginger
  • ¼ tsp. ground allspice
  • ¼ tsp. ground nutmeg
  • tsp. ground cardamom
  • ¼ tsp. salt

Instructions

  1. Line the slow cooker with parchment paper, pressing it against the sides.
  2. Add the nuts to the slow cooker and mix in the remaining ingredients until the nuts are coated.
  3. Cover the slow cooker and set it to LOW heat.
  4. After 30 minutes, stir the nuts and replace the lid.
  5. Continue cooking, stirring every 30 minutes, until the nuts are sticky and fragrant (about 2 to 3 hours).
  6. Carefully lift the nuts out using the parchment paper and place them on a baking sheet to cool completely.
