Ingredients

The salmon packets

  • 4 pieces salmon filets
  • 2 slices lemons
  • 1 bunch asparagus
  • 4 cloves garlic
  • 1 cup mixed olives
  • 4 tbsp capers
  • ½ cup thinly sliced red onion
  • 4 sprigs fresh oregano
  • to taste olive oil

The toppings

  • 1 cup baby tomatoes
  • ½ cup crumbled feta cheese

Seasoning

  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 375°F.
  2. Season the salmon filets with salt, pepper, and olive oil.
  3. Spread the pressed garlic evenly over the salmon.
  4. On one half of parchment paper, layer lemon slices and asparagus.
  5. Place the salmon on top and add olives, capers, onions, and oregano.
  6. Drizzle with olive oil and fold the parchment to seal the package.
  7. Repeat for remaining salmon filets.
  8. Bake for 15 minutes.
  9. Serve by opening the packages and adding tomatoes and feta on top.
