Gluten Free Chocolate Almond Bars with Pomegranate

Ingredients

  • 3 cups raw almonds
  • cup pomegranate seeds
  • ½ cup unsweetened coconut flakes
  • ¼ cup cocoa powder
  • ½ cup vanilla pea protein powder
  • ⅓ to ½ cup honey or maple syrup
  • 1 pinch sea salt
  • 1 tsp pure vanilla extract
  • ½ cup hot water

Instructions

  1. Preheat the oven to 350°F.
  2. Grind the raw almonds in a food processor.
  3. Add the coconut and most of the pomegranate seeds to the ground almonds and blend again, saving a few seeds for topping.
  4. In a large bowl, mix the ground mixture with cocoa powder and pea protein.
  5. In a separate bowl, combine honey or maple syrup, hot water, and vanilla, then add to the dry ingredients.
  6. Add sea salt and adjust sweetness if necessary by adding more sweetener or water.
  7. Mix well with hands and press into a lined baking dish, then sprinkle remaining pomegranate seeds on top.
  8. Bake for 25-30 minutes, checking at 25 minutes.
