Gluten Free Chocolate Almond Bars with Pomegranate

Instructions
- Preheat the oven to 350°F.
- Grind the raw almonds in a food processor.
- Add the coconut and most of the pomegranate seeds to the ground almonds and blend again, saving a few seeds for topping.
- In a large bowl, mix the ground mixture with cocoa powder and pea protein.
- In a separate bowl, combine honey or maple syrup, hot water, and vanilla, then add to the dry ingredients.
- Add sea salt and adjust sweetness if necessary by adding more sweetener or water.
- Mix well with hands and press into a lined baking dish, then sprinkle remaining pomegranate seeds on top.
- Bake for 25-30 minutes, checking at 25 minutes.
