Cinnamon-Spiced Overnight Oats with Apple

The apple mixture

extra-virgin coconut oil

apple, peeled, cored, and diced

chopped pecans (optional)
Instructions
- Heat coconut oil in a skillet and sauté the diced apple with maple syrup, cinnamon, and salt until softened.
- In a bowl, combine oats, almond milk, yogurt, chia seeds, and vanilla.
- Stir in the cooled apple mixture.
- Cover and refrigerate for at least 4 hours or overnight.
- Before serving, stir and add more almond milk if needed. Top with pecans and extra cinnamon if desired.
