Cinnamon-Spiced Overnight Oats with Apple

Ingredients

The oats mixture

  • ¾ cup old-fashioned rolled oats
  • 1 cup unsweetened almond milk
  • ¼ cup nonfat plain Greek yogurt
  • 1 tablespoon chia seeds
  • ½ teaspoon pure vanilla extract

The apple mixture

  • 1 teaspoon extra-virgin coconut oil
  • 1 medium apple, peeled, cored, and diced
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1 pinch kosher salt
  • ¼ cup chopped pecans (optional)

Instructions

  1. Heat coconut oil in a skillet and sauté the diced apple with maple syrup, cinnamon, and salt until softened.
  2. In a bowl, combine oats, almond milk, yogurt, chia seeds, and vanilla.
  3. Stir in the cooled apple mixture.
  4. Cover and refrigerate for at least 4 hours or overnight.
  5. Before serving, stir and add more almond milk if needed. Top with pecans and extra cinnamon if desired.
