Instructions
- Toast walnuts in a skillet with olive oil until brown and fragrant, then set aside.
- In a jar, mix rolled oats, chia seeds, brown sugar, cinnamon, nutmeg, and salt.
- Add soy milk and diced apples to the dry mixture and stir well.
- Cover the jar and refrigerate for at least 4 hours or up to 4 days.
- Serve cold or warm, topped with toasted walnuts and extra cinnamon if desired.
