Ingredients

The oats

  • ½ cup rolled oats
  • 1 tablespoon chia seeds
  • 2 teaspoons light brown sugar
  • ½ to ¾ teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • pinch salt

The liquid and fruit

  • 1 cup unsweetened soy milk
  • 1 medium Gala apple, diced

The toppings

  • ¼ cup raw walnuts
  • 1 teaspoon olive oil

Instructions

  1. Toast walnuts in a skillet with olive oil until brown and fragrant, then set aside.
  2. In a jar, mix rolled oats, chia seeds, brown sugar, cinnamon, nutmeg, and salt.
  3. Add soy milk and diced apples to the dry mixture and stir well.
  4. Cover the jar and refrigerate for at least 4 hours or up to 4 days.
  5. Serve cold or warm, topped with toasted walnuts and extra cinnamon if desired.
