Instructions
- Preheat the oven to 400°F.
- Mix chopped apples and pears with grapeseed oil, lemon juice, maple syrup, cinnamon, ginger, and cardamom, then spread on a baking sheet.
- Bake for 15 minutes until the fruit is softened and golden brown.
- In four jars, divide the oats, chia seeds, soy milk, and vanilla extract evenly.
- Cover the jars and shake to mix the ingredients.
- Open the jars and divide the roasted apples and pears among them.
- Add optional toppings like chopped pecans, tahini, maple syrup, and cinnamon if desired.
- Refrigerate for at least 8 hours until the oats are soft and creamy.
