Ingredients

Roasted Apples and Pears

  • 1 medium apple, chopped (about 1 ⅓ cups)
  • 2 medium pears, chopped (about 1 ⅓ cups)
  • 1 tablespoon grapeseed oil
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • teaspoon ground cardamom (optional)
  • to taste salt

Overnight Oats

  • 1 ⅓ cups old-fashioned oats
  • 4 tablespoons chia seeds
  • 2 cups unsweetened soy milk (or milk of choice)
  • 4 teaspoons vanilla extract

Optional Toppings

  • to taste chopped pecans, toasted if desired
  • to taste tahini or almond butter or peanut butter
  • to taste maple syrup
  • to taste ground cinnamon

Instructions

  1. Preheat the oven to 400°F.
  2. Mix chopped apples and pears with grapeseed oil, lemon juice, maple syrup, cinnamon, ginger, and cardamom, then spread on a baking sheet.
  3. Bake for 15 minutes until the fruit is softened and golden brown.
  4. In four jars, divide the oats, chia seeds, soy milk, and vanilla extract evenly.
  5. Cover the jars and shake to mix the ingredients.
  6. Open the jars and divide the roasted apples and pears among them.
  7. Add optional toppings like chopped pecans, tahini, maple syrup, and cinnamon if desired.
  8. Refrigerate for at least 8 hours until the oats are soft and creamy.
