Ingredients

The dough

  • 2 cups spelt flour
  • 1 packet rapid-rise yeast
  • 2 Tbsp organic cane sugar
  • ½ tsp sea salt
  • ½ cup unsweetened plain almond milk
  • ¼ cup water
  • 2 Tbsp olive oil

Topping

  • 3 Tbsp rolled oats

Instructions

  1. Combine ¾ cup spelt flour, yeast, sugar, and salt in a large mixing bowl.
  2. Heat almond milk, water, and olive oil until warm, then add to dry ingredients and mix well.
  3. Add more spelt flour gradually until a soft dough forms, then knead until smooth.
  4. Let the dough rest for 10 minutes, then divide into 10-11 pieces and shape into balls.
  5. Place the dough balls in a greased baking dish and let rise until doubled in size, about 45 minutes to 1 hour.
  6. Preheat the oven to 375°F (190°C). Sprinkle the rolls with oats.
  7. Bake for 18-20 minutes until golden brown, then brush with olive oil if desired.
  8. Let cool slightly before serving.
