Fluffy Vegan Spelt Rolls

Instructions
- Combine ¾ cup spelt flour, yeast, sugar, and salt in a large mixing bowl.
- Heat almond milk, water, and olive oil until warm, then add to dry ingredients and mix well.
- Add more spelt flour gradually until a soft dough forms, then knead until smooth.
- Let the dough rest for 10 minutes, then divide into 10-11 pieces and shape into balls.
- Place the dough balls in a greased baking dish and let rise until doubled in size, about 45 minutes to 1 hour.
- Preheat the oven to 375°F (190°C). Sprinkle the rolls with oats.
- Bake for 18-20 minutes until golden brown, then brush with olive oil if desired.
- Let cool slightly before serving.
