Smoked Pork Chops

cayenne pepper (optional)
Instructions
- Combine kosher salt, black pepper, garlic powder, thyme, cumin, and cayenne pepper in a bowl.
- Cut the pork loin into 1 ½ inch chops and pat them dry.
- Rub the chops with olive oil and season with the spice mixture on both sides.
- Preheat the smoker to 250°F and let the chops come to room temperature.
- Add wood chips to the smoker tube.
- Place a thermometer probe in the thickest part of the chop and place them on the smoker rack with a pan underneath.
- Cook for 1 ½ to 2 hours until internal temperature reaches 140°F.
- Continue adding wood chips for the first hour and a half.
- Remove from the smoker and let rest for 10 minutes before slicing.
