Smoked Pork Chops

Ingredients

The pork chops

  • 3 – 5 lb pork loin
  • 6-8 pieces pre-cut pork chops (center cut or loin cut)

The seasoning

  • 2 teaspoon olive oil
  • 2 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • ½ teaspoon cayenne pepper (optional)

Instructions

  1. Combine kosher salt, black pepper, garlic powder, thyme, cumin, and cayenne pepper in a bowl.
  2. Cut the pork loin into 1 ½ inch chops and pat them dry.
  3. Rub the chops with olive oil and season with the spice mixture on both sides.
  4. Preheat the smoker to 250°F and let the chops come to room temperature.
  5. Add wood chips to the smoker tube.
  6. Place a thermometer probe in the thickest part of the chop and place them on the smoker rack with a pan underneath.
  7. Cook for 1 ½ to 2 hours until internal temperature reaches 140°F.
  8. Continue adding wood chips for the first hour and a half.
  9. Remove from the smoker and let rest for 10 minutes before slicing.
