Smoked Pork Chops

The brine

fennel seeds (lightly crushed)

fresh thyme (or 1 teaspoon dried thyme)
For cooking

BBQ rub
Instructions
- Prepare a brine by dissolving salt and sugar in 1 cup of boiling water.
- Add allspice, fennel seeds, peppercorns, bay leaf, garlic, and thyme to the brine.
- Stir in 7 cups of very cold water and mix well.
- Submerge the pork chops in the brine, cover, and refrigerate for at least 6 hours or up to 24 hours.
- Remove the pork chops from the brine and pat dry.
- Preheat an electric smoker to 250°F and load with apple wood chips.
- Preheat a grill, skillet, or grill pan to medium-high heat.
- Drizzle olive oil over the pork chops and rub BBQ spice on both sides.
- Sear the pork chops on the grill for 2-3 minutes per side until slightly charred.
- Transfer the pork chops to the smoker and cook for 45-60 minutes until the internal temperature reaches 145°F.
- Let the pork chops rest for at least 5 minutes before serving.
