Instructions
- Boil 1 cup of water and mix in salt and sugar until dissolved.
- Add allspice, fennel seeds, peppercorns, bay leaf, garlic, and thyme to the bowl.
- Stir in 7 cups of cold water and combine.
- Submerge pork chops in the brine, cover, and refrigerate for 6 to 24 hours.
- Remove chops from brine and pat dry.
- Preheat grill to medium-high heat.
- Grill chops for 6-8 minutes per side until desired doneness.
- Brush barbecue sauce on both sides and grill for an additional minute.
- Let chops rest for 5-10 minutes before serving.
