Ingredients

The brine

  • 8 cups water
  • ¼ cup kosher salt
  • 3 tablespoons sugar
  • ½ teaspoon ground allspice
  • 2 teaspoons fennel seeds
  • 2 teaspoons whole peppercorns
  • 1 leaf bay leaf
  • 2 cloves garlic
  • 3 sprigs fresh thyme

The pork chops

  • 4 pieces bone-in pork chops

The sauce

  • ½ cup barbecue sauce

Instructions

  1. Boil 1 cup of water and mix in salt and sugar until dissolved.
  2. Add allspice, fennel seeds, peppercorns, bay leaf, garlic, and thyme to the bowl.
  3. Stir in 7 cups of cold water and combine.
  4. Submerge pork chops in the brine, cover, and refrigerate for 6 to 24 hours.
  5. Remove chops from brine and pat dry.
  6. Preheat grill to medium-high heat.
  7. Grill chops for 6-8 minutes per side until desired doneness.
  8. Brush barbecue sauce on both sides and grill for an additional minute.
  9. Let chops rest for 5-10 minutes before serving.
