Instructions
- Combine salt, sugar, cracked peppercorn, and garlic in a pot.
- Pour hot chicken stock into the pot and stir until the salt and sugar dissolve.
- Add bay leaves, thyme, and orange slices, then stir in 2 cups of ice water.
- Submerge the pork chops in the brine solution.
- Cover the pot and refrigerate for 1-3 hours (do not exceed 24 hours).
- Remove the pork chops from the brine, rinse, and pat dry before cooking.
