Ingredients

  • ¼ cup kosher salt
  • ¼ cup brown cane sugar
  • 2 tsp black peppercorns, cracked
  • 4-6 cloves garlic
  • 2 cups chicken stock
  • 2 pcs bay leaves
  • 2 sprigs thyme
  • 1 orange sliced
  • 2 cups ice water
  • 4 pieces rib loin pork chops

Instructions

  1. Combine salt, sugar, cracked peppercorn, and garlic in a pot.
  2. Pour hot chicken stock into the pot and stir until the salt and sugar dissolve.
  3. Add bay leaves, thyme, and orange slices, then stir in 2 cups of ice water.
  4. Submerge the pork chops in the brine solution.
  5. Cover the pot and refrigerate for 1-3 hours (do not exceed 24 hours).
  6. Remove the pork chops from the brine, rinse, and pat dry before cooking.
