The pork
Instructions
- Combine 1 cup of water, brown sugar, black peppercorns, bay leaf, thyme, garlic, and salt in a saucepan over low heat.
- Simmer until the brown sugar and salt dissolve.
- Remove from heat and add the remaining 3 cups of water.
- Allow the brine to cool completely.
- Once cooled, transfer the brine to a resealable plastic bag and add the pork chops.
- Refrigerate for at least 6 hours, up to 24 hours.
- Remove the pork chops from the brine, pat dry, and cook as desired.
