Pork Chop Brine

Ingredients

The brine

  • 4 cups water
  • 3 tablespoons brown sugar
  • 1 teaspoon black peppercorns
  • 1 dried bay leaf
  • 2 sprigs fresh thyme
  • 2 cloves garlic
  • ΒΌ cup kosher salt

The pork

  • 4 pieces pork chops

Instructions

  1. Combine 1 cup of water, brown sugar, black peppercorns, bay leaf, thyme, garlic, and salt in a saucepan over low heat.
  2. Simmer until the brown sugar and salt dissolve.
  3. Remove from heat and add the remaining 3 cups of water.
  4. Allow the brine to cool completely.
  5. Once cooled, transfer the brine to a resealable plastic bag and add the pork chops.
  6. Refrigerate for at least 6 hours, up to 24 hours.
  7. Remove the pork chops from the brine, pat dry, and cook as desired.
