Ingredients

Pork Chops Brine

  • 4 cups water
  • ¼ cup salt
  • ¼ cup apple juice
  • 1 teaspoon peppercorns
  • 1 medium orange peel
  • 1 leaf bay leaf

Pork Chops

  • 4 pieces bone-in pork chops (~2 lbs., 1 ¼-inch thick)
  • 3 tablespoons garlic powder
  • 2 tablespoons brown sugar
  • 1 tablespoon bread crumbs
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Make the brine by whisking water and salt until dissolved, then add apple juice, peppercorns, orange peel, and bay leaves.
  2. Pat each pork chop dry and score the fatty part to prevent buckling.
  3. Place pork chops in a plastic bag, pour the brine over them, seal, and refrigerate for 30-45 minutes.
  4. Mix garlic powder, brown sugar, paprika, black pepper, and bread crumbs in a bowl.
  5. Preheat the oven to 400ºF and spray a baking sheet with nonstick cooking spray.
  6. Remove pork chops from the brine, pat dry, and coat with the seasoning mixture on both sides.
  7. Drizzle the pork chops with olive oil and place them on the baking sheet.
  8. Bake for 10 minutes, flip, and bake for an additional 5 minutes.
  9. Broil for 1-3 minutes until golden brown, checking the internal temperature (should be around 140ºF).
  10. Let the pork chops rest for 5 minutes before serving.
