Instructions
- Make the brine by whisking water and salt until dissolved, then add apple juice, peppercorns, orange peel, and bay leaves.
- Pat each pork chop dry and score the fatty part to prevent buckling.
- Place pork chops in a plastic bag, pour the brine over them, seal, and refrigerate for 30-45 minutes.
- Mix garlic powder, brown sugar, paprika, black pepper, and bread crumbs in a bowl.
- Preheat the oven to 400ºF and spray a baking sheet with nonstick cooking spray.
- Remove pork chops from the brine, pat dry, and coat with the seasoning mixture on both sides.
- Drizzle the pork chops with olive oil and place them on the baking sheet.
- Bake for 10 minutes, flip, and bake for an additional 5 minutes.
- Broil for 1-3 minutes until golden brown, checking the internal temperature (should be around 140ºF).
- Let the pork chops rest for 5 minutes before serving.
