Ingredients

The pork chops

  • 2 pieces Bone in pork chops (about 1 inch thick)

The seasoning

  • 1 tsp sea salt
  • 1 tsp coconut sugar
  • ½ tsp ground pepper
  • ½ tsp paprika
  • ½ tsp ground mustard
  • ¼ tsp garlic powder

Instructions

  1. Preheat the smoker to 225° Fahrenheit.
  2. Mix all seasoning ingredients in a small jar.
  3. Sprinkle seasoning generously on both sides of each pork chop.
  4. Place pork chops on the smoker and smoke for 90 minutes.
  5. After 90 minutes, remove the pork chops and increase the heat to 450° Fahrenheit.
  6. Once the grill reaches high heat, sear the pork chops on both sides for 1-2 minutes.
  7. Ensure the internal temperature of the pork chops reaches at least 140° Fahrenheit.
  8. Remove from the smoker and let the pork chops rest for 10 minutes before serving.
