Quick and Easy Pickled Red Onions

Instructions
- Slice the onions thinly and place them in a glass canning jar.
- Add the garlic clove and pink peppercorns to the jar.
- In a large measuring cup, combine hot water, apple cider vinegar, maple syrup, and salt, then stir to dissolve the salt.
- Pour the pickling mixture over the onions until they are fully submerged.
- Cover the jar loosely and let the onions sit for about an hour.
- For best flavor, transfer the jar to the fridge to chill completely before using.
