Ingredients

The onions

  • 3-4 cups thinly sliced red onions
  • 1 clove garlic, peeled
  • 1 tbsp pink peppercorns

The pickling brine

  • cups hot water
  • ¾ cup apple cider vinegar
  • 3 tbsp pure maple syrup
  • tbsp salt

Instructions

  1. Slice the onions thinly and place them in a glass canning jar.
  2. Add the garlic clove and pink peppercorns to the jar.
  3. In a large measuring cup, combine hot water, apple cider vinegar, maple syrup, and salt, then stir to dissolve the salt.
  4. Pour the pickling mixture over the onions until they are fully submerged.
  5. Cover the jar loosely and let the onions sit for about an hour.
  6. For best flavor, transfer the jar to the fridge to chill completely before using.
