Pickled Red Onions

Instructions
- Halve the red onion from top to bottom and slice it very thinly.
- In a medium saucepan, heat the water, white vinegar, apple cider vinegar, honey, kosher salt, and any additional spices until it simmers.
- Whisk the mixture until the honey dissolves.
- Place the sliced onions in a jar and pour the warm pickling liquid over them.
- Ensure the onions are submerged and let sit for at least 15 minutes before using.
