Pickled Red Onions

Ingredients

The pickled onions

  • 1 small/medium red onion
  • ½ cup water
  • cup distilled white vinegar
  • cup apple cider vinegar
  • 3 tablespoons honey or pure maple syrup
  • 1 tablespoon kosher salt

Optional spices

  • 1 leaf bay leaf
  • 1 stick cinnamon (broken in half)
  • 2 to 3 whole cloves
  • 2 to 3 whole peppercorns
  • teaspoon red pepper flakes

Instructions

  1. Halve the red onion from top to bottom and slice it very thinly.
  2. In a medium saucepan, heat the water, white vinegar, apple cider vinegar, honey, kosher salt, and any additional spices until it simmers.
  3. Whisk the mixture until the honey dissolves.
  4. Place the sliced onions in a jar and pour the warm pickling liquid over them.
  5. Ensure the onions are submerged and let sit for at least 15 minutes before using.
