Ingredients

The pickling mixture

  • 2 cups white vinegar
  • 2 cups water
  • cup cane sugar
  • 2 tablespoons sea salt

The onions

  • 2 small red onions

Optional flavorings

  • 2 cloves garlic
  • 1 teaspoon mixed peppercorns

Instructions

  1. Thinly slice the red onions and divide them between jars.
  2. If using, place garlic and peppercorns in each jar.
  3. Heat vinegar, water, sugar, and salt in a saucepan until dissolved.
  4. Let the brine cool slightly, then pour it over the onions.
  5. Allow the jars to cool to room temperature before refrigerating.
