Pickled Red Onions

The onions

Instructions
- Slice the red onion and place it in a jar with garlic, peppercorns, and thyme.
- In a pot, combine apple cider vinegar, water, sugar, and salt, and heat until simmering.
- Cook the mixture until the sugar and salt dissolve.
- Pour the hot vinegar mixture over the onions in the jar.
- Let the jar sit at room temperature for one hour.
- Cover the jar and refrigerate for at least two hours before serving.
