Ingredients

The pickling mixture

  • ¾ cup apple cider vinegar
  • 1 cup water
  • 1 tablespoon granulated sugar
  • teaspoons kosher salt

The onions

  • cups red onion, thinly sliced
  • 1 small garlic clove, halved
  • 6 pieces black peppercorns
  • 1 small sprig fresh thyme

Instructions

  1. Slice the red onion and place it in a jar with garlic, peppercorns, and thyme.
  2. In a pot, combine apple cider vinegar, water, sugar, and salt, and heat until simmering.
  3. Cook the mixture until the sugar and salt dissolve.
  4. Pour the hot vinegar mixture over the onions in the jar.
  5. Let the jar sit at room temperature for one hour.
  6. Cover the jar and refrigerate for at least two hours before serving.
