Goat Cheese Stuffed Phyllo Swirls

Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment.
- Layer a piece of phyllo dough flat on a clean surface and brush with melted butter, then add another sheet on top and brush it with butter.
- Crumble about an eighth of the goat cheese along the long edge of the phyllo dough.
- Loosely roll the phyllo dough over the cheese to create a log and spiral it into a swirl shape.
- Place the spiral on the prepared baking sheet and repeat with the remaining dough.
- Bake for 20-25 minutes until lightly golden and crisp.
- Remove from the oven and drizzle with honey, then top with pomegranates and pistachios. Serve warm or at room temperature.
