Goat Cheese Stuffed Phyllo Swirls

Ingredients

The swirls

  • 16 sheets phyllo dough, thawed
  • 1 tablespoon unsalted butter, melted
  • 10.5 ounces fresh goat cheese

The topping

  • cup honey
  • 1 pomegranate arils from
  • to taste chopped pistachios

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment.
  2. Layer a piece of phyllo dough flat on a clean surface and brush with melted butter, then add another sheet on top and brush it with butter.
  3. Crumble about an eighth of the goat cheese along the long edge of the phyllo dough.
  4. Loosely roll the phyllo dough over the cheese to create a log and spiral it into a swirl shape.
  5. Place the spiral on the prepared baking sheet and repeat with the remaining dough.
  6. Bake for 20-25 minutes until lightly golden and crisp.
  7. Remove from the oven and drizzle with honey, then top with pomegranates and pistachios. Serve warm or at room temperature.
