One-Pan Kielbasa Veggie Bake

Ingredients

The vegetables

  • 12 oz green beans
  • 5 medium red potatoes
  • 2 cups bell peppers
  • 1 small red onion
  • 2 tsp fresh thyme leaves
  • 3 cloves garlic

The protein

  • 12–14 oz kielbasa or sausage

The oil and seasoning

  • 2 Tbsp avocado oil or olive oil
  • to taste sea salt
  • to taste pepper

Instructions

  1. Preheat the oven to 375°F.
  2. Combine all ingredients on a sheet pan lined with parchment paper.
  3. Toss with oil and season with salt and pepper.
  4. Bake for 25 minutes or until veggies are tender, tossing once or twice during baking.
