Ingredients

The noodles and vegetables

  • 2 packages Miracle Noodles (shiratake konjac)
  • 2 ounces cucumber
  • 1 ounce snow pea pods
  • 1 ounce red bell pepper
  • ½ ounce carrot
  • ½ ounce green onion
  • 1 ounce bean sprouts
  • 5 ounces steak

The dressing

  • ½ cup coconut milk
  • 3 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 2 tablespoons erythritol
  • ½ ounce cilantro
  • 1 clove garlic
  • 4 leaves basil
  • 4 leaves mint

Instructions

  1. Rinse the Miracle Noodles in a colander and let them drain.
  2. Blend coconut milk, lime juice, garlic, fish sauce, and erythritol until smooth.
  3. Slice the vegetables and steak thinly.
  4. Microwave the snow peas with a little water for 40-50 seconds, then refresh in ice water.
  5. Chiffonade the basil and mint leaves.
  6. Dry the noodles and toss with the herbs and dressing, reserving some dressing for serving.
  7. Arrange the steak and vegetables on the noodles and drizzle with remaining dressing.
