Ground Chicken Meatloaf

Ingredients

The meatloaf

  • 2 lbs ground chicken
  • 8 oz mushrooms
  • 1 large carrot
  • ½ onion onion
  • 3 cloves garlic
  • 8 slices bacon

The seasonings

  • ¼ cup coconut aminos
  • 2 tsp oregano
  • 2 tsp parsley
  • 1 tsp pepper

The cooking fat

  • 2 tbsp ghee

Instructions

  1. Cook diced bacon in a skillet until crispy, then remove and set aside.
  2. Preheat the oven to 400°F and grease a loaf pan with ghee.
  3. Process garlic, onion, mushrooms, and carrot in a food processor until finely diced.
  4. In a bowl, combine ground chicken, coconut aminos, oregano, parsley, pepper, processed veggies, and cooked bacon, mixing well.
  5. Transfer the mixture to the loaf pan, shaping it to fit.
  6. Bake in the oven for 90 minutes or until the internal temperature reaches 165°F.
  7. Let it cool for at least 5 minutes before slicing and serving.
