Ingredients

  • 2 lbs ground beef
  • 2 eggs eggs
  • ½ cup gluten-free breadcrumbs
  • ¼ cup sun-dried tomatoes
  • 1 ½ tsp salt
  • 4 oz onion, diced finely
  • 1 tbsp fresh parsley

Instructions

  1. Preheat the oven to 350 degrees.
  2. Prepare the breadcrumbs if making homemade by toasting gluten-free bread and processing it into crumbs.
  3. In a large bowl, combine all ingredients including eggs and breadcrumbs.
  4. Mix the ingredients by hand or with a wooden spoon.
  5. Transfer the mixture to a 9 by 5 inch loaf pan.
  6. Bake for about an hour until the internal temperature reaches 160 degrees.
  7. Cool slightly before cutting and serve warm.
