Ingredients

The meatloaf

  • 2 pounds lean ground beef
  • ½ cup diced white onion
  • 2 large eggs
  • 1 cup gluten-free breadcrumbs
  • 2 cloves garlic
  • ¼ cup milk of choice
  • 2 teaspoons salt
  • ½ teaspoon freshly ground black pepper

The glaze

  • ½ cup ketchup
  • 2 tablespoons light brown sugar
  • 1 teaspoon dijon mustard

Instructions

  1. Preheat the oven to 350°F and line a large baking sheet with aluminum foil.
  2. In a large mixing bowl, combine the ground beef, diced onion, eggs, gluten-free breadcrumbs, minced garlic, milk, salt, and black pepper. Mix until fully incorporated.
  3. Transfer the mixture to the prepared baking sheet and shape it into a loaf, approximately 8 inches long and 4 inches wide.
  4. In a small mixing bowl, whisk together the ketchup, brown sugar, and dijon mustard until well combined.
  5. Brush or pour the glaze over the meatloaf, covering it evenly.
  6. Bake in the preheated oven for 1 hour, checking the doneness with a meat thermometer until it reads 155°F.
  7. Once done, let the meatloaf rest for 5 minutes before slicing into 8 pieces and serving.
