Instructions
- Preheat the oven to 350°F and line a large baking sheet with aluminum foil.
- In a large mixing bowl, combine the ground beef, diced onion, eggs, gluten-free breadcrumbs, minced garlic, milk, salt, and black pepper. Mix until fully incorporated.
- Transfer the mixture to the prepared baking sheet and shape it into a loaf, approximately 8 inches long and 4 inches wide.
- In a small mixing bowl, whisk together the ketchup, brown sugar, and dijon mustard until well combined.
- Brush or pour the glaze over the meatloaf, covering it evenly.
- Bake in the preheated oven for 1 hour, checking the doneness with a meat thermometer until it reads 155°F.
- Once done, let the meatloaf rest for 5 minutes before slicing into 8 pieces and serving.
