Ingredients

The meatloaf

  • 1 pound ground beef
  • 20 ounces frozen chopped spinach
  • 1 cup riced cauliflower
  • 1 cup finely chopped onions
  • 3 cloves minced garlic
  • 2 large eggs
  • 3 slices bacon

The seasoning

  • teaspoons Magic Mushroom Powder
  • 2 teaspoons extra virgin olive oil

Optional

  • 1 cup marinara sauce

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. Squeeze excess liquid from thawed spinach or kale and place in a bowl.
  3. Add ground beef, onions, riced cauliflower, garlic, seasoning, and whisked eggs to the bowl.
  4. Mix the ingredients gently with your hands.
  5. Transfer the mixture to the loaf pan and flatten the top, then place bacon slices on top.
  6. Bake for 50 minutes until cooked through and the internal temperature reaches 160°F.
  7. Broil for 5-10 minutes until the bacon is crispy.
  8. Let the meatloaf rest for 10 minutes before slicing and serving with marinara sauce if desired.
