Instructions
- Preheat the oven to 350°F and grease a loaf pan.
- Squeeze excess liquid from thawed spinach or kale and place in a bowl.
- Add ground beef, onions, riced cauliflower, garlic, seasoning, and whisked eggs to the bowl.
- Mix the ingredients gently with your hands.
- Transfer the mixture to the loaf pan and flatten the top, then place bacon slices on top.
- Bake for 50 minutes until cooked through and the internal temperature reaches 160°F.
- Broil for 5-10 minutes until the bacon is crispy.
- Let the meatloaf rest for 10 minutes before slicing and serving with marinara sauce if desired.
