Ingredients

The meatloaf

  • 1 tablespoon butter
  • 1 cup diced onion
  • 4 cloves garlic, minced
  • 2 pounds ground beef
  • ½ cup blanched almond flour
  • 2 large eggs, beaten
  • 3 tablespoons fresh parsley, chopped
  • 2 tablespoons Worcestershire sauce
  • ¾ tablespoon Italian seasoning
  • ½ teaspoon paprika
  • to taste salt
  • to taste pepper

The glaze

  • ¾ cup unsweetened ketchup
  • 2 tablespoons brown sweetener
  • 1 teaspoon garlic powder
  • ½ teaspoon pepper
  • ½ teaspoon salt
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Preheat the oven to 350°F.
  2. Sauté onions and garlic in butter until soft, then set aside.
  3. In a large bowl, combine ground beef with the cooked onions, garlic, and other meatloaf ingredients.
  4. Mix the ingredients without overworking the meat.
  5. Line a loaf pan with parchment paper and add the meat mixture, shaping it well.
  6. Bake for 40 minutes.
  7. While baking, mix all glaze ingredients in a bowl.
  8. After 40 minutes, spread the glaze over the meatloaf and bake for an additional 20-25 minutes.
  9. Check the internal temperature to ensure it reaches at least 160°F.
  10. Let the meatloaf rest for 10-20 minutes before slicing.
