Ingredients

The Meatloaf

  • 2 large eggs
  • 1 tablespoon coconut aminos
  • 1 tablespoon paleo-friendly ketchup
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon ground mustard
  • 1 teaspoon garlic powder
  • 2 pounds ground beef
  • cup almond flour
  • 1 small onion

The Glaze

  • ¼ cup paleo-friendly ketchup
  • 1 teaspoon coconut aminos
  • 1 teaspoon yellow mustard

Instructions

  1. Preheat the oven to 350°F and lightly grease a baking sheet or loaf pan.
  2. In a large bowl, whisk together the eggs, coconut aminos, ketchup, salt, pepper, ground mustard, and garlic powder until combined.
  3. Add the ground beef, almond flour, and diced onion to the bowl and mix until all ingredients are combined.
  4. Transfer the meatloaf mixture to the baking sheet or loaf pan and shape it into a loaf.
  5. Bake in the preheated oven for 30 minutes.
  6. While the meatloaf bakes, mix together the glaze ingredients in a small bowl and refrigerate.
  7. After 30 minutes, remove the meatloaf from the oven and top it with the glaze mixture.
  8. Return the meatloaf to the oven and bake for an additional 20 minutes or until the internal temperature reaches 165°F.
  9. Let the meatloaf rest for 5 minutes before slicing and serving.
