Ingredients

The meatloaf

  • 2 lbs ground beef 80/20
  • 1 medium onion, grated or finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • ¼ cup sugar free ketchup
  • ¼ cup milk of choice
  • 1 tablespoon parsley, freshly chopped
  • ¾ cup keto bread crumbs
  • 1 teaspoon salt
  • ½ teaspoon pepper

The meatloaf glaze

  • ¾ cup sugar free ketchup
  • teaspoons white vinegar
  • tablespoons brown sugar substitute

Instructions

  1. Preheat the oven to 190C/375F and prepare a 9x5-inch loaf pan.
  2. In a large bowl, mix all the meatloaf ingredients together thoroughly.
  3. Transfer the mixture into the prepared pan and shape it into a loaf.
  4. Bake the meatloaf in the oven for 40 minutes.
  5. While the meatloaf is baking, prepare the glaze by whisking together all glaze ingredients.
  6. After 40 minutes, remove the meatloaf from the oven and spread the glaze on top.
  7. Return the meatloaf to the oven and bake for an additional 15-20 minutes.
  8. Once done, let the meatloaf rest for 10 minutes before slicing and serving.
