Ingredients

The meatloaf

  • 1 cup Onion, finely chopped
  • ½ cup Carrot, finely grated
  • 1 tbsp Garlic, minced
  • lb Ground Beef (90% lean)
  • ½ cup Quick Oats
  • ¼ cup Milk
  • 1 tsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp Tomato paste
  • 2 tsp Salt
  • 1 tsp Pepper
  • 1 large Egg

For Topping

  • ½ cup Unsweetened Ketchup
  • 1 tbsp Dijon mustard
  • 2 tbsp Coconut sugar

Instructions

  1. Preheat the oven to 375°F.
  2. Sauté onion, carrot, and garlic in olive oil until soft.
  3. In a large bowl, combine sautéed vegetables with oats, milk, Worcestershire sauce, Dijon mustard, tomato paste, salt, pepper, and egg.
  4. Add ground beef and mix lightly until well incorporated.
  5. Shape the mixture into a loaf on a greased baking sheet.
  6. Bake for 30 minutes.
  7. Prepare the topping by mixing ketchup, Dijon mustard, and coconut sugar.
  8. After 30 minutes, add the topping and bake for an additional 10-15 minutes until the internal temperature reaches 160°F.
  9. Let the meatloaf rest for 20-30 minutes before slicing and serving.
