Instructions
- Preheat the oven to 375°F.
- Sauté onion, carrot, and garlic in olive oil until soft.
- In a large bowl, combine sautéed vegetables with oats, milk, Worcestershire sauce, Dijon mustard, tomato paste, salt, pepper, and egg.
- Add ground beef and mix lightly until well incorporated.
- Shape the mixture into a loaf on a greased baking sheet.
- Bake for 30 minutes.
- Prepare the topping by mixing ketchup, Dijon mustard, and coconut sugar.
- After 30 minutes, add the topping and bake for an additional 10-15 minutes until the internal temperature reaches 160°F.
- Let the meatloaf rest for 20-30 minutes before slicing and serving.
