Ingredients

The meatloaf

  • 1 ½ pounds ground beef
  • 1 unit egg
  • ½ cup shredded mozzarella
  • ½ unit onion, chopped
  • ¾ cup almond flour
  • to taste unit salt and pepper

The glaze

  • 2 tablespoons Swerve Brown (optional)
  • 2 tablespoons prepared mustard
  • cup sugar-free ketchup

Instructions

  1. Preheat the oven to 350° Fahrenheit.
  2. In a large bowl, combine the ground beef, egg, onion, shredded mozzarella, almond flour, and season with salt and pepper.
  3. Place the mixture in a greased 5x9 loaf pan or form into a loaf and place in a greased 9x13 baking dish.
  4. In a separate bowl, mix the Swerve Brown (if using), mustard, and ketchup to create the glaze.
  5. Pour the glaze over the uncooked meatloaf.
  6. Bake for 50 minutes to 1 hour, until the internal temperature reaches 155° Fahrenheit.
  7. Let the meatloaf rest for 5 minutes before slicing and serving.
