Instructions
- Grate the mushrooms, cauliflower, leek, carrot, and parsnip using a food processor or by hand.
- Preheat the oven to 400°F.
- Sauté the grated vegetables in avocado oil over medium heat for 8 minutes, adding garlic in the last few minutes.
- In a large bowl, mix the eggs with rosemary, oregano, parsley, salt, and pepper.
- Add the ground meats and cooled vegetables to the bowl and mix gently until well incorporated.
- Transfer the mixture to a loaf pan or baking pan, spreading it evenly.
- Bake for 60-70 minutes until the internal temperature reaches 165°F.
- Remove from the oven, drain excess liquid, and optionally top with ketchup before returning to the oven for a few minutes.
- Allow to cool for a few minutes before slicing and serving.
