Keto + Paleo Meatloaf

Ingredients

The meatloaf

  • 1 lb ground beef
  • 1 lb ground pork
  • 2 eggs eggs
  • ½ cup Whole30 ketchup (optional topping)

The vegetables

  • 2 cups mushrooms (about 8oz)
  • 1 cup cauliflower florets (or riced cauliflower)
  • 1 medium leek (or onion)
  • 1 medium carrot
  • 1 medium parsnip (or carrot)
  • 4 cloves garlic, minced

The seasonings and oils

  • 2 tbsp avocado oil (or ghee)
  • 2 tbsp rosemary, freshly chopped
  • 2 tbsp oregano, freshly chopped
  • ½ cup parsley, freshly chopped
  • 2 tsp salt
  • 2 tsp pepper

Instructions

  1. Grate the mushrooms, cauliflower, leek, carrot, and parsnip using a food processor or by hand.
  2. Preheat the oven to 400°F.
  3. Sauté the grated vegetables in avocado oil over medium heat for 8 minutes, adding garlic in the last few minutes.
  4. In a large bowl, mix the eggs with rosemary, oregano, parsley, salt, and pepper.
  5. Add the ground meats and cooled vegetables to the bowl and mix gently until well incorporated.
  6. Transfer the mixture to a loaf pan or baking pan, spreading it evenly.
  7. Bake for 60-70 minutes until the internal temperature reaches 165°F.
  8. Remove from the oven, drain excess liquid, and optionally top with ketchup before returning to the oven for a few minutes.
  9. Allow to cool for a few minutes before slicing and serving.
