Ingredients

The meatloaf

  • 1 pound ground chicken
  • ½ cup almond flour
  • ½ onion minced
  • 1 large egg, beaten
  • ¼ cup chopped flat-leaf parsley
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • 1 teaspoon sea salt
  • ¼ teaspoon ground black pepper

The topping

  • ½ cup prepared ketchup

Miscellaneous

  • 1 spray nonstick cooking spray

Instructions

  1. Preheat the oven to 400°F and spray a loaf pan with nonstick cooking spray.
  2. In a large bowl, combine the ground chicken, almond flour, minced onion, beaten egg, chopped parsley, Worcestershire sauce, garlic powder, sea salt, and black pepper.
  3. Mix the ingredients thoroughly and transfer the mixture to the prepared loaf pan, spreading it evenly.
  4. Bake the meatloaf for 30 minutes, then spread ketchup on top and return it to the oven.
  5. Continue baking for another 35 minutes, or until the internal temperature reaches 165°F.
  6. Allow the meatloaf to rest for about 10 minutes before slicing and serving.
