Vegan Peanut Butter Cups

Instructions
- Line a mini muffin tin with 12 mini cupcake liners.
- Melt the chocolate chips in the microwave or over a pot of boiling water, adding coconut oil to thin it out.
- Spoon melted chocolate into each muffin liner, spreading a thin layer up the sides, and refrigerate for about 5 minutes to set.
- Remove from the fridge and divide the peanut butter equally among the 12 liners, dolloping it in the center.
- Top each liner with remaining chocolate to cover and optionally sprinkle with sea salt.
- Refrigerate for another 30 minutes to fully set the chocolate.
