Healthy Vegan Peanut Butter Cups

The filling

smooth peanut butter

coconut sugar

vanilla extract

Instructions
- Melt half of the chocolate chips and coconut butter/oil.
- Line a mini muffin tin with muffin liners.
- Pour melted chocolate into the bottom of each liner and freeze for 5 minutes.
- Mix peanut butter, coconut sugar, vanilla, and optional salt until combined.
- Add a teaspoon of the peanut butter mixture on top of the set chocolate.
- Melt the remaining chocolate and pour it over the peanut butter layer.
- Freeze for another 5 minutes, then remove from liners and enjoy.
