Ingredients

The chocolate coating

  • cups dark chocolate chips

The peanut butter filling

  • ½ cup all-natural organic peanut butter
  • 2 tablespoons maple syrup
  • 1 tablespoon coconut flour
  • ¼ teaspoon fine sea salt
  • to taste coarse sea salt (for topping)

Other

  • 16 pieces mini paper liners

Instructions

  1. Line a mini muffin pan with the mini paper liners.
  2. Melt half of the dark chocolate over a double boiler.
  3. Scoop the melted chocolate into the bottom of each mini muffin liner.
  4. In a medium bowl, mix together the peanut butter filling ingredients until thick.
  5. Form the filling into balls and flatten them slightly.
  6. Press the peanut butter filling into each muffin cup.
  7. Melt the remaining dark chocolate and spoon it over the tops of the filled cups.
  8. Sprinkle with coarse sea salt if desired.
  9. Allow the cups to cool at room temperature or refrigerate to speed up the process.
