Mini Vegan Peanut Butter Cups

The peanut butter filling

Instructions
- Line a mini muffin pan with the mini paper liners.
- Melt half of the dark chocolate over a double boiler.
- Scoop the melted chocolate into the bottom of each mini muffin liner.
- In a medium bowl, mix together the peanut butter filling ingredients until thick.
- Form the filling into balls and flatten them slightly.
- Press the peanut butter filling into each muffin cup.
- Melt the remaining dark chocolate and spoon it over the tops of the filled cups.
- Sprinkle with coarse sea salt if desired.
- Allow the cups to cool at room temperature or refrigerate to speed up the process.
