Homemade Peanut Butter Cups

The peanut butter filling

The chocolate

dark chocolate (melted)
Instructions
- Line a mini cupcake tray with 12 liners.
- Chop half of the dark chocolate and melt it in the microwave, stirring every 15 seconds.
- Scoop a heaping teaspoon of melted chocolate into each liner and push it up the sides. Refrigerate for 10 minutes or freeze for 5 minutes until hardened.
- In a bowl, mix peanut butter, maple syrup, vanilla, salt, and coconut flour until smooth.
- Scoop 1-2 teaspoons of the peanut butter mixture into each chocolate cup.
- Return to the fridge or freezer for a few minutes.
- Melt the remaining dark chocolate and repeat the process, covering the peanut butter filling.
- Sprinkle flaky salt on top and refrigerate for 20 minutes or freeze for 10 minutes until solid.
- Peel away the liners and enjoy.
