Homemade Peanut Butter Cups

Ingredients

The peanut butter filling

  • ½ cup smooth peanut butter
  • 2 tsp maple syrup
  • 1 tsp vanilla
  • pinch flaky salt
  • 1 ½ tsp coconut flour

The chocolate

  • 1 cup dark chocolate (melted)

Instructions

  1. Line a mini cupcake tray with 12 liners.
  2. Chop half of the dark chocolate and melt it in the microwave, stirring every 15 seconds.
  3. Scoop a heaping teaspoon of melted chocolate into each liner and push it up the sides. Refrigerate for 10 minutes or freeze for 5 minutes until hardened.
  4. In a bowl, mix peanut butter, maple syrup, vanilla, salt, and coconut flour until smooth.
  5. Scoop 1-2 teaspoons of the peanut butter mixture into each chocolate cup.
  6. Return to the fridge or freezer for a few minutes.
  7. Melt the remaining dark chocolate and repeat the process, covering the peanut butter filling.
  8. Sprinkle flaky salt on top and refrigerate for 20 minutes or freeze for 10 minutes until solid.
  9. Peel away the liners and enjoy.
